Savory (chubritsa, merudia) is one of the most traditional Bulgarian spices. It is used as the base for many of the traditional Bulgarian spice mixes.
Savory has a strong distinct aroma slightly resembling that of thyme but much more distinctive. It has a vast application in Bulgarian cuisine – it is an integral part of the preparation of many favorite dishes as lentils, green beans, peas, beans, cabbage, potatoes, pizza and others. It can be combined with other spices such as sharena salt.
Savory is also known to stimulate the activity of the stomach and intestines, so it is very suitable for seasonings that are hard to digest such as legumes – beans, lentils, peas, etc.
